With Christmas and the holidays just around the corner, you'll need to start thinking about what kind of food you want to serve. In my opinion, cranberries are good anytime of year, but they do seem to be a cornerstone to festive eating. Having said that, can anything be better than this delicious Cranberry Salad for the holidays? I think not!
But, you don't need to wait for Thanksgiving or Christmas to use this salad at your next party! It's just as good and most certainly refreshing in the middle of the hot summer. Try it, you'll like it!
What you'll need:
- 2 10-ounce packages of mixed salad greens
- 2 cups dried cranberries (sweetened)
- 2 4-ounce packages of crumbled Feta cheese
- 1 cup walnuts (toasted and coarsely chopped)
- 4 Tablespoons balsamic vinegar
- 2 Tablespoons honey
- 2 teaspoons Dijon mustard
- 1/2 teaspoon ground black pepper
- 1/2 cup extra virgin olive oil
To make this easy appetizer recipe:
First, layer your salad greens with the cranberries, cheese and walnuts in any kind of festive, shallow salad bowl. Or instead, use a large platter.
Next, briskly whisk the vinegar, honey, mustard and pepper together. Then, add the oil in a thin stream to your mixture while constantly whisking the dressing ingredients. Make sure you blend everything well.
Simply pour the dressing over your prepared salad and toss to coat the lettuce. This is so easy that you can plan on making it minutes ahead of when you actually sit down and serve it! Enjoy and watch it disappear!
